The Buffalo Sabres player Helenius struck in the 71st minute in Zurich to hand the Swiss a third straight and fifth overall defeat in a final at the worlds.
Robust defending helped the Finns to their first title since 2022 as the Swiss, so dominant in previous games, continued their curse at finals.
They failed to score with five players against three in the second period and missed good chances late in regulation while Damien Riat was denied an overtime winner by the crossbar.
But Finland also hit the post twice before Helenius won it.
Norway won the match for third place 3-2 against Canada earlier in the day.
